HEALTH KANJI


This kanji is good for health. My mother gave this from my childhood, and iam giving to my son.
This is an ideal food for children.
Ingredients:
1. Wheat - 1 cup
2. Ragi - 1 cup
3. Corn - 1cup
4. Ground nut - 1cup
5. Putnalpappu - 1cup
6. soya - 1cup
7. Badham - 1cup
8. Cashewnut - 1cup
9. Rice - 1/4cup
10. Elachi - 4 Nos.
Method:
Roast all the pulses in a pan separately with out oil. Let it cool and make a smooth powder.
This powder can be stored for three months. Boil 1 glass of water in a bowl, Take 2 teaspoon of above said powder and mix it with small quantity of water and pour it in the boiling water.
Cook it for 5 minutes,add milk,sugar . Serve it warm.

MANGO PULIHORA.



As this is summer we can easily get raw mangoes. This is simple and can be made very quickly.
Ingredients:
1. Raw mango - 1 no (grated)
2. Mustard seeds - 1/2 tsp
3. Urad dal - 1 tsp
4. Ground nut - 5 tsp
5. Cashew nut- 5 tsp.
6. Greenchilly- 5 nos
7.Cooked rice- 2 cups
Method:
1. Do the seasoning in a hot pan add oil,Mustard and wait to crackle. Add urad dhal,Ground nut,Greenchilly,Cashew nut and Curry leaves.
2. Now add some Turmeric powder,Asafoetida.
3. Now put off the stove and add grated mangoes,Stir it nicely.
4. Finally add rice to this mixture,and serve it.

Palkova (a sweet made with milk)


This sweet is rich in protein and iron. Usually children dont like to have milk. By making this
sweet we can nourish them. This is the common sweet in Tamil Nadu. We can make this sweet very easy and quick.

Ingredients:
1. Milk - 1 litre
2. Vinegar - 1 Tbs
3. Jaggery - 100 gms (Grated)
4. Cardomons - 4 Nos (powdered)

Method:
1. Boil the milk and add vinegar to it. (now you can see the milk turns into cottage cheese)
2. Now filter it and add grated jaggery to it.
3. Fry it approx. for 20min till it turns brownish in colour.
4. Now add powdered cardomons, we can also add cashew nuts for taste.

PRAWN BIRIYANI WITH EGG KURMA

Prawn biryani is the favorite of my son and egg kurma is of my husband. So i combined this combination to make them happy. This is very simple and easy to prepare.
Ingredients for Prawn Biriyani:
Prawns - 1/2 Kg
Onions - 2 Nos.
Greenchilly - 3 Nos.
Chilly powder - 2 Tbs
Rice - 1 1/2 cups
Salt - To taste
Mint leaves - 1 bunch

Method for preparation:
1. wash the rice and soak it for 30 min.
2. Heat the oil in a thick bottom pan and add onions and green chilly and fry them till it turns brown.
3. Now add washed prawns and mint leaves, Stir it for 7 to 8 min.( Now you can see all the water get absorbed )
4. Now add chilly powder and salt.
5 Now add just rice and water let it cook .
6. Once the rice is cooked, add corriander leaves and serve it.
Ingredients for egg kurma:
Egg - As our need
Onion - 1 No.
Tomatoes - 4 Nos.
Green Chilly - 5 Nos
Chilly powder - 1 Tbs
Coconut - 5 Pcs ( Grind and make it smooth paste )

Method:
1. Boil the eggs and keep it aside.
2. Heat the oil in a pan and add onions, tomatoes, greenchilly and make them fry.
3. Now add chilly powder and salt, water and let to boil for 10 min.
4. Add the coconut paste and stir it 3 min.
5. Add the boiled eggs,get garnished. Serve it with prawn biriyani.
Tip: This kurma taste good for chapathi.
